Banana, peanut butter and cacao flapjacks

Ingredients

200g oats
2 tbsp coconut oil
2 tbsp honey
2 mashed bananas
1 tbsp peanut butter
Chopped nuts
Cacao nibs
Cinnamon
Vanilla extract

Method

  1. Preheat oven to 180c, line a 20cm square baking tin with greaseproof paper.
  2. Melt the coconut oil over a low heat then add the honey, mashed bananas, peanut butter, cinnamon and vanilla extract.
  3. Once the wet ingredients are thoroughly combined, mix in the oats, nuts and cacao nibs to an even consistency.
  4. Bake in the oven for 15 minutes or until light golden brown.
  5. Allow to cool before cutting into individual portions to avoid crumbling.
