Healthy, cheat's Eton mess

Ingredients

800g strawberries, washed and hulled
500g tub natural, Greek yoghurt
8 pack of meringue nests, crushed

Method

  1. Chop the strawberries into large chunks then blend approximately 1/4 of them.
  2. Loosely mix the chopped and blended strawberries into the yoghurt with just over half of the crushed meringue.
  3. Spoon evenly into small dessert bowls, leaving the remaining meringue to be sprinkled on top when your guests are ready.
