Healthy, cheat's Eton mess content
Ingredients
800g strawberries, washed and hulled
500g tub natural, Greek yoghurt
8 pack of meringue nests, crushed
Method
- Chop the strawberries into large chunks then blend approximately 1/4 of them.
- Loosely mix the chopped and blended strawberries into the yoghurt with just over half of the crushed meringue.
- Spoon evenly into small dessert bowls, leaving the remaining meringue to be sprinkled on top when your guests are ready.
