Rice crispy buns

Ingredients

Chocolate:
180g bar of chocolate
100g salted butter
3 tablespoons of golden syrup
200g rice crispies

Marshmallow:
300g miniature marshmallows
100g salted butter
200g rice crispies

Method

Chocolate rice crispy buns

  1. Melt the chocolate, butter and syrup in a mixing bowl over a slowly simmering pan of water (the bowl shouldn’t touch the water).
  2. Once melted and mixed to a smooth consistency, mix in the rice crispies until evenly coated.
  3. Spoon out into bun cases and leave to cool (using a bun/muffin tin will help the bun cases hold shape but aren’t necessary).

Marshmallow rice crispy buns

  1. Place the rice crispies in a large mixing bowl.
  2. Melt the marshmallows and butter in a saucepan over a low-medium heat.
  3. Once melted and mixed to a smooth consistency, pour into the mixing bowl with the rice crispies and mix until evenly coated.
  4. Spoon out into bun cases, working quickly to ensure they stay warm and easy to spoon/shape.
